WHO SHOULD ATTEND? This programme is suitable for Proprietors, Senior Management, Head Chefs or
Quality Controllers.
ENTRY REQUIREMENTS: Persons should have previously completed QQI Award Level 5 Food Safety Training or equivalent training to include FSAI Level 3. It is recommended that learners should have a very good verbal and written command of the English language.
PROGRESSION: Progression may be attained by embarking on further education and training including the QQI Award Level 6 Conducting Food Standards Audits.
PROGRAMME AIMS / OVERVIEW: To provide learners with the knowledge to design, implement, review and manage a Food Safety Management System.
PROGRAMME OBJECTIVES:
On completion of this programme, the learner should be able to:
-Demonstrate knowledge and understanding of the relevant standards and guidelines applicable.
-Demonstrate detailed understanding of HACCP Principles and their application
-Demonstrate specialised knowledge of Biological, Chemical, Physical and Allergen hazards and their causes, effects and implications.
-Demonstrate specialised knowledge of hazard prevention.
-Demonstrate the skills required for designing, implementing, managing and reviewing a Food Safety Management System.
PROGRAM CONTENT:
The core content of the programme contains the following:
-Hazard Analysis & Risk Assessment
-Standards, Guidelines, Legislations
-Distinction between Process Hazard Analysis and Threat Assessment
-Pre Requisite Programmes
-Designing, Implementing, Reviewing and Managing HACCP
TRAINING DELIVERY METHOD:
Online / eLearning: Participants must be comfortable with Teams Meetings (leave camera on at all times)/Microsoft Word.
Email will be used for all communication around the training.
ASSESSMENT:
60% Project and 40% Exam
The exam will be provided by email on Day 4 and will need to be saved to a desktop and completed using Word.
